We largely follow the Mediterranean Diet, known for weight loss and general good health. This Mediterranean Breakfast Toast is worthy of your breakfast repertoire.
A typical workday breakfast in “The Med” is a quick and savory vegetarian breakfast. Hummus toast is quite popular. So is salad. Yep. Salad for breakfast. The components for this dish are found all over the region.
In Italy, you might get whole grain toast with some soft cheese and fruit, while in the Eastern Mediterranean, you’ll have hummus or plain Greek yoghurt, or even better, a fresh, warm pita dipped in good olive oil and sprinkled with za’atar. In Egypt, it’s Foul Muddamas, with hard boiled eggs and cucumbers and tomatoes on the side.
On the weekends, breakfast is more like a sit-down feast. The Mezze board is a solid main feature. Think charcuterie board, but without all the meat. A good Mezze board has it all – hummus, baba ganoush, pita, falafel, olives, feta cheese, and lots of fresh vegetables like tomatoes, artichokes, radishes and cucumbers, with some grapes tossed in as a palate cleanser. This Mediterranean Breakfast Toast brings all the goodness of the region together. It’s a mezze board in toast form.
The beauty of this dish is it truly has it all: Lots of fiber, protein, vegetables, heart-healthy fats, and fresh herbs and spices.
Here, we take some good whole grain bread toast and slather on hummus. Next, we top it with dressed greens, tomatoes, cucumbers and avocado. Sliced olives and / or a little crumbled feta or goat cheese go on on next. Sprinkle some za’atar or dried oregano and fresh herbs. We love mint and parsley to provide extra freshness in each bite. It almost looks too good to eat. Almost.

Equipment

Mise en place
- 1 slice whole grain bread
- 1 tbsp hummus
- 1/2 c tender leafy greens – baby kale, arugula, watercress, spinach, mesclun
- 1/2 tbsp red wine vinaigrette or lemon juice
- 1 ea. small tomato sliced 1/4" thick
- 1/8 ea. cucumber sliced 1/4" thick, about 6 slices
- 1/2 ea. avocado sliced
- 1/2 tbsp za'atar, dukkah, or dried oregano
- 1 tbsp crumbled feta or goat cheese
- 1/2 tsp olive oil good quality, for drizzling on top
- 1 tbsp fresh chopped herbs oregano, parsley, or thyme
Method
Build Order
- Toasted bread, with hummus
- Tossed greens with vinaigrette or lemon juice
- Sliced tomatoes and cucumbers
- Sliced avocado, fanned over the top of the veggies
- Sprinkle za'atar or dried oregano and crumbled feta or goat cheese
- Drizzle with olive oil
- Rain chopped fresh herbs on top with a sprinkle of good sea salt and fresh cracked pepper
