These Sumac marinated onions are a Turkish delight!
To make sumac onions, you only need a few ingredients. Originating in Turkey, this condiment starts with thinly slivered red onion, sumac, an acid, like red wine vinegar or lemon juice, and salt. From there, feel free to add red pepper (we like Aleppo pepper, but red pepper flakes work fine), olive oil or herbs like parsley.
Sumac is a spice consisting of the dried up berries from the sumac bush that get ground up into a powder. It tastes kind of lemony, acidic. We use sumac on shawarma, kebabs, or for a recipe where we don’t want to add yogurt or dairy. And sumac and onions go really well together.
These delicious onions bring acidity to rich or fatty dishes. We put them on roasted and grilled meats and veggies and on salads.

Sumac Marinated Onions
From Turkey, this Mediterranean condiment goes great on grilled or roasted meats and veggies.
Equipment
- 1 Medium bowl
Ingredients
- 1 red onion halved, thinly sliced
- 1/4 cup sumac
- 1 cup red wine vinegar or lemon juice
- 1 tbsp salt
Optional ingredients
- 1 tbsp Aleppo pepper
- 2 tbsp olive oil
- 1 tbsp parsley chopped
- 1 tbsp mint chopped
Instructions
- Combine all ingredients in bowl. Stir to combine. Marinate one hour in the refrigerator before serving.
Notes
Onions will keep in a tightly sealed jar for up to a week.
